Whenever I have leftover turkey breast, it’s always on my family dinner menu.

Ingredients:

Turkey breast, 2 refrigerated pie crusts, 1 can peas, 1 can sliced carrots, 1 cup flour, 2 1/2 cups cold water, 1 tsp. onion powder and 1 tsp. garlic powder

Directions:

Preheat oven to 425°. Grease a 13×9 inch glass pan. Cut the turkey breast into small cubes and put into a mixing bowl. Add peas, carrots and onion and garlic powders into bowl and mix with a large spoon. Then pour into glass pan. In a small bowl with a lid, add cold water and flour. Close lid securely and shake flour mixture. Then pour mixture over chicken and vegetables.

Remove plastic from pie crusts and microwave for 40 seconds. Then combine pie crusts and knead for 3 minutes. Then roll out into a large crust to place over the 13×9 inch pan. Fold sides neatly and cut 8 slits in the pie crust.

Place in the oven for 35 to 40 minutes or until crust is golden brown. Remove from oven and let cool for 5 minutes.

Enjoy!

My husband and I moved into our new home last summer; and slowly but surely (with the help of a very handy father-in-law) we are making this house our own.

Now it was time to update our first floor powder room. It’s a small but useful room, that needed a color boost and new accessories. The room was too small for dark paint; and the mirror was very overwhelming and ornate.

I decided that a bright yellow for the walls was the perfect color to brighten up this blah room. Then, we were on the hunt for room accessories to coordinate with our yellow walls. At Lowe’s, I found a wonderful oval white trimmed mirror. In our upstairs master bathroom hung a little shelf above the toilet; and immediately we knew it should be in this bath and it was painted white.

However, I needed an accent color. After long hours on Pinterest, orange became the color of choice. I found orange ribbon at Joann’s Fabrics; and the orange towels plus the potted plant and picture frame/print came from Ikea.

The end result was magical. What a huge difference!! Plus, this powder room was extremely inexpensive to update.

Happy Decorating!

My family loves French toast; and here’s my simple recipe to enjoy any day of the week.

Directions:

Overnight, freeze white sandwich bread. The next morning, turn on your griddle to 400º and grease. In a large mixing bowl, add three eggs, 1 cup of milk and 1 tablespoon of cinnamon. Mix well. Then remove bread from freezer and dip one slice at a time in the mixture. Before placing bread on griddle, smooth some “real” butter on it (gives the toast a great golden look). Place bread slice on griddle; and grill on each side for 4 minutes until golden brown. This recipe makes 8 to 10 French toast slices.

Add some sausage or bacon…and yummy!!! Enjoy!

I had some red potatoes, olive oil and parmesan in the cabinet; and just started creatively cooking.

Directions:

Wash eight potatoes and cut them into quarters. Place the potatoes into a ziplock plastic bag, and add extra virgin olive oil and tons of parmesan cheese. After securely locking the bag, toss and shake the bag for a couples minutes. When potatoes are heavily coated, open the bag and place the potatoes on a foiled and greased cookie sheet. Then bake at 375º for forty-five minutes.

The potatoes are ready when golden and crisp! Enjoy!

The world seems so unfair as your beautiful child requires a half dozen medications, breathing treatments and feeding tubes to stay alive. This is Bennett’s story (the son of my sorority sister); and his family is determined to find a cure.

CF is a life-threatening genetic disease that causes mucus to build up and clog some of the organs in the body, particularly the lungs and pancreas. Sixty years ago, most children with CF only survived to their first birthday, but today patients are living into their mid-thirties and beyond.

Bennett is a very blessed child. With the help of modern medicine and new research, there’s hope that he will win this fight.

The recipe is very simple. However, I did make a double batch and baked in a 13×9 inch pan for 40 minutes. They came out warm and chewy; and the M&M’s have the right amount of chocolate to satisfy any craving!

Enjoy!

After heavy investigation on Pinterest, I found Strawberry Cake Cookies from http://www.loveveggiesandyoga.com.

I made a two dozen batch which requires a whole cake mix (Ducan Hines Strawberry Supreme Cake Mix is the best). Follow the directions completely, including chilling the cookie batter for 20 minutes before baking. When correctly made, the cookies turn out amazing!

Also, the recipe ends with a cream cheese frosting recipe. I am a not a fan of cream cheese icing. Instead, I made my homemade buttercream icing. This decadent frosting is actually the buttercream recipe on a box of C&H Powdered Sugar. http://www.chsugar.com/recipes/recipedisplay.asp?RecipeId=Va1015200120234 The simple ingredients include powdered sugar, milk, vanilla and butter. So easy!

My child gave this recipe two thumbs up! I hope you do too! Enjoy!

Last Saturday, I practiced this meal by making my first corned beef. Thank goodness, dinner was perfect; and here’s the easy recipe.

In a greased crock pot, add red potatoes and baby carrots. On top of the vegetables, place a 4 to 5 lb. defrosted corned beef. Add the seasoning packet, garlic powder, onion powder, salt and pepper. Heat for 6-8 hours or until meat is tender.

Delicious!

Fact: In Ireland, the Irish do not eat corned beef.

The #1 killer of women is heart disease….not cancer. The American Heart Association launched the Go Red For Women campaign to create awareness of female heart health.

Knowledge is power; and prevention is key! Heart disease can be eliminated by eating a healthy diet, continuously exercising and not smoking. Plus, it’s important to learn the signs of a heart attack to prevent premature death.

*Signs of a Heart Attack:

-Uncomfortable pressure, squeezing, fullness or pain in the center of your chest. It lasts more than a few minutes, or goes away and comes back.

-Pain or discomfort in one or both arms, the back, neck, jaw or stomach.

-Shortness of breath with or without chest discomfort

-Other signs such as breaking out in a cold sweat, nausea or lightheadedness.

-As with men, women’s most common heart attack symptom is chest pain or discomfort. But women are somewhat more likely than men to experience some of the other common symptoms, particularly shortness of breath, nausea/vomiting and back or jaw pain.

However, if you think something is wrong, go with your gut and call your doctor or 911 immediately. You are loved.

Today, band together with your mothers, sisters, best friends and fight heart disease one fabulous red outfit at a time!
