Homemade Meatball Subs

Do you enjoy a good meatball sub? Well, try my recipe. It’s homemade and very easy.

Meatballs:

Ingredients – 2 lbs. lean ground beef, 1 cup bread crumbs, 1/2 cup grated Parmesan cheese, 2 eggs, 2 tsp. salt, 1 tbsp. dried parsley, 2 tsp. black pepper, 2 tsp. garlic powder and 2 tsp. onion powder.

Sauce:

1 extra large can of tomato sauce, 1 large can of tomato paste, 2 tbsp Italian seasoning and 1/2 cup sugar.

Directions:

In a large greased pot, mix sauce ingredients and place on a low heat.

Combine meatball ingredients and form into 2-inch diameter meatballs. Roll in flour and set aside. Heat olive oil in a large skillet. When oil is hot, brown meatballs until crispy on every side. Then place into sauce and cook on low for a few hours. (If meatballs are not completely done inside while frying, they will heat throughout once in the sauce.)

 

 

For a six-inch sub (Italian or French bread), place two meatballs and extra sauce into sliced bread and add a piece of Mozzarella cheese. Place in the oven on broil for 2-3 minutes or until cheese is melted and browned.

Serve hot and enjoy!

Note: Go to Jimmy John’s for your bread. Day old bread is $.40 a loaf/fresh is $2.00 a loaf (16 inches)

My Mr. Grey

Stores are selling out fast. Libraries have waiting lists.  And women are reading more with their Kindles, iPads and unmarked books at the gym.  The “Fifty Shades of Grey” trilogy has become a worldwide phenomenon; and I have been bewitched by the handsome, seductive and f*%ked up Mr. Christian Grey.

Many are asking, “What is the big deal about these books?”. Here’s the answer. Every woman can relate to the main character, Anastasia Rose Steele.  She is shy, smart, self-conscience and yearns for a “sweep you off your feet” romantic relationship. Mr. Christian Grey is every woman’s fantasy….self-made billionaire, sexy, good-looking, knows all the right things to say and very dangerous (It’s obvious a woman wrote these books).

The story, besides being extremely erotic, is about two people saving each other. And in the end, it’s more about unconditional love; and the heroine is triumphant.

These books have been described as “mommy” porn, but who doesn’t need a little erotica in their lives. It’s only natural. I have been reading Danielle Steele novels since I was in my twenties; and of course, the entire Twilight series (even though that is extremely tame, but gives you a dangerous vampire to admire).

I really love to hear men encouraging their significant others to read these books in hopes to be rewarded. Also, adult toy sales have skyrocketed since the release of the trilogy, especially blinder and bondage items.

These books are fabulous; and I encourage every woman to read them. However, because of the extreme adult content, I would not suggest these for anyone under college level.

Until Snoring Does Us Part……

In some cultures, men and women do not sleep in the same room. In fact, until the dawn of the Industrial Revolution and it’s result of overcrowded living conditions, men and women did sleep in separate quarters. And now I know why….snoring!

I love my husband dearly, but his snoring (caused by allergies) is driving me insane. The past few nights, I have been enjoying a restful night sleep in our guest room. Until his Claritin kicks in, I am afraid this is the only resolution to a good night’s sleep.

I also worry that he may develop Sleep Apna – “a sleep disorder characterized by abnormal pauses in breathing or instances of abnormally low breathing, during sleep.” I always check to see if his breathing stops while sleeping. My father has this problem; and he wears a breathing device at night in order to avoid any heart problems and other complications.

Also, in ancient times, married couples only shared a bed for one thing only….and it’s not sleep.

“And, according to the National Association of Home Builders, they’ve seen an increase in requests for ‘two master bedroom’ homes  and predict that by 2015, ’60 percent of all custom upscale homes will be built with two owner suites’.”

I will never wish to sleep apart from my husband…just looking forward to the allergy medicine working. Until then, the guest room and “Fifty Shades of Grey”.

Rainbow Cupcakes

My daughter’s class is celebrating her Summer birthday tomorrow. She loves princesses, unicorns, rainbows….anything girly! So, I decided to make rainbow cupcakes, however they are also called princess or unicorn poop cupcakes. Choose the name you like best.

First, start with a white cake mix. Prepare as directed. Then split the cake batter evenly and add food coloring.

Preheat oven as directed. Add a spoonful of each colored batter into the cupcake liners. This creates layers of color.

Bake as directed and the result looks like this!

“Melt In Your Mouth” Chicken

The name says it all! This chicken dish was wonderful; and my family gave it “four thumbs up”!

I already had many friends make this recipe and gave me their likes and dislikes. There was an overall dislike for tasting to much mayo. So, I cut the recommended mayo in half (1/2 cup). The chicken was perfect…very juicy, tender with a light Parmesan crust.

MaMa’s Super Club Tilapia Recipe

I love tilapia! In fact, my family and I have it so much I was getting bored with just grilling it. But thank goodness for Pinterest. I found a recipe call MaMa’s Super Club Tilapia Parmesan recipe.  This dish was fantastic! http://www.food.com/recipe/mamas-supper-club-tilapia-parmesan-53914

The ingredients are simple. However, I left out the green onion. (Not a fan of onion)

 

The tilapia was perfect and very rich. I did cook it a bit longer than the recipe requires; and turned the heat to broil to brown off the top.

The Silent Killer

Ladies, there is a silent killer among us. Thousands of women die from ovarian cancer each year. With the correct knowledge, this disease can be stopped in the earliest stages and so many women’s lives can be saved.

It’s important to always attend your annual OBGYN appointment. Your doctor preforms a pelvic exam to check for enlarged ovaries and fluid in the abdomen. If there is reason for more investigation, your doctor will order blood tests, etc.

Also, be aware of early symptoms such as:

-Bloat

-Fatique

-Pelvic or abdominal pain

-Feeling full quickly

-Urgent urinary symptoms

Yes, these symptoms could be a number of issues such as  irritable bowel syndrome. But if they increase in frequency or you begin to have pain during sex, back pain, weight loss with bloat, it’s time to call your doctor immediately.

And remember, if you are worried, go with your gut and talk with your doctor. It’s better to be safe than sorry.
