Valentine’s Day is fast approaching; and I wanted to make a fun holiday treat for my child’s preschool class. After heavy investigation on Pinterest, I found Strawberry Cake Cookies from http://www.loveveggiesandyoga.com.
I made a two dozen batch which requires a whole cake mix (Ducan Hines Strawberry Supreme Cake Mix is the best). Follow the directions completely, including chilling the cookie batter for 20 minutes before baking. When correctly made, the cookies turn out amazing!
Also, the recipe ends with a cream cheese frosting recipe. I am a not a fan of cream cheese icing. Instead, I made my homemade buttercream icing. This decadent frosting is actually the buttercream recipe on a box of C&H Powdered Sugar. http://www.chsugar.com/recipes/recipedisplay.asp?RecipeId=Va1015200120234 The simple ingredients include powdered sugar, milk, vanilla and butter. So easy!

The icing sounds great…basically you did what I did but rather than using all butter, I used half butter/half cream cheese and then tons of powdered sugar and a splash of cream & vanilla. I love frosting, all ways!
