A St. Louis Original….Gooey Butter Cake

I am a native of St. Louis, MO and I love its longtime traditions such as  gooey butter cake. 

Here is my recipe for this unique dessert and it’s very easy (also, it’s not fat free)!

Preheat oven to 350°

1st Layer – Mix together a butter yellow cake mix, stick of real butter,   2 eggs then put into a greased pan.

2nd Layer – Mix together a 8oz.cream cheese packet, box of powdered sugar, 2 eggs and tsp. of vanilla. Then pour over first layer.

Bake for 35-40 minutes. Cool and Enjoy!

The New York Housewives Season…Very Disappointing

After watching the first episode of this season’s Real Housewives of New York, I was completely disappointed. I missed Bethany…she was the comic relief and reality check to all the ladies. However, I watched bits and pieces of this season; and found myself realizing that I would never get those minutes back again.

But I did DVR the Reunion Part 1 and finally watched it last night. I conclude that Andy Cohen is a saint for dealing with these women. He had a hard time controlling their comments and actions; and at one point he almost lost his cool, but remained professional.

The entire show (and season) was blondes vs. brunette’s (I prefer the blondes) and the cat fighting went on for 90 minutes. I am no longer able to watch Jill and Kelly. Jill continuously gets involved where she shouldn’t and she always makes the comment, “I guess she was not really my friend”. Jill, it takes a friend to make a friend. She is all about an eye for an eye!!! There is no forgiveness unless it’s her way!

Then there’s Kelly….who lives in Kelly Land (not as cool as Disney Land). She constantly makes comments on camera and then denies those comments. She is delusional and I am embarrassed to watch her on TV. I wish Bravo would take her on this show.

Part 2 of the Reunion show is Monday, August 1st. Still not sure if I will tune in, but it will be DVR’d.

27…Not A Lucky Age for Musicians

This past weekend, singer/songwriter, Amy Winehouse was found dead in her London apartment. She was a brilliant performer and unfortunately, the world will never know what more her amazing talent could have accomplished.

Amy was 27 years old and joins what is called the “27 Club”. Other famous members/musicians include Kurt Cobain, Jim Morrison and Jimi Hendrix. These great legends were here on earth for such a short time; but gave us anthems that described the heart of their generations.

Easy Homemade Spaghetti Sauce!

I HATE pre-made, jarred spaghetti sauce, so I make my own. This recipe is fast, easy and delicious.

First, fry 1 to 1.5 pounds of salacia or mild Italian sausage, drain the fat and set aside. In a large greased pot, add 1 large can of tomato sauce and 1 can of tomato paste. Then, add Italian seasoning, salt, pepper, onion powder, garlic powder and sugar (all to YOUR liking) and stir. Slowly add the drained meat and stir. Finally, let simmer for 20-30 minutes and serve.

This is also an easy crockpot recipe, and put on the lowest heat for longer cooking.

*Any leftover sauce can be frozen and used the next week as a dipping sauce for toasted ravioli or add more water, use as a sauce for frozen ravioli or tortellini.

She wins this prestigious award for using the most of her “Real Housewife” fame to create her own brand, Skinnygirl™.  Bethany is a New York Times Best Selling author and celebrity natural food chef. But there’s more to her. Bethany is hosting talk shows, ice-skating, launching new products (Skinnygirl™  Margarita & Sangria) and staring in Bravo’s hit show, “Bethany Ever After”. Besides doing it all professionally, she is a loyal wife and nurturing and loving mother.

Congrats Bethany! You continue to surpass expectations; and I can’t wait to see what you come out with next! (Maybe Baby #2)

Top Ten Reasons Why Kate, Duchess Of Cambridge Is A Class Act!

Kate, Duchess of Cambridge, is a fresh and lovely breeze to the Royal Family and here’s my Top Ten Reasons why she is a class act!

10. Smart Cookie – Kate graduated from St. Andrew’s University in Scotland with a degree in Art History.

9. A Paparazzi Pro – Kate handles herself very comfortably around the paparazzi and does not allow them to distract her from daily duties.

8. Pippa – Kate’s sister Pippa is lovely and would easily make a wonderful royal too. (Harry, ask her out!)

7. Clothes – No matter if Kate is wearing Alexander McQueen or Banana Republic, she looks fabulous! Always simple and elegant…a true role model for all young women.

6. Hair – Kate’s long, brown locks are always shiny, soft and manageable.

5. Sporty – Kate is a true sportswoman with talents in shooting, rowing, swimming, tennis and much more!

4. Caring – Kate seems to share in William’s, Duke of Cambridge, charity work with children…this would have made Diana so proud.

3. Fascinators – Kate is always wearing a fascinator that takes notice. She wore my favorite during her recent trip to Canada…the Canadian Red Maple Leaf.

2. A Commoner – Kate grew up in the English countryside as an upper-middle class young lady. Her parents are self-made millionaires, who built a party-supply store from the ground up.

1. And the #1 reason, Kate is a class act….She is loyal! – When Prince William broke her heart in 2007, Kate could have easily spoken to the tabloids and exploit the Prince for money. However, she kept her cool and never spoke a word of their relationship to the press. Private is private to her.

I Love Old Navy Graphic Tees!

I am shouting to the world…..I love Old Navy Graphic Tees!!!! This summer, I have bought several of these wonderful tees and they are comfortable, fashionable and better yet, reasonably priced. I love wearing these tees with jeans, capris, shorts, skirts, etc. They wash well and do not shrink…(some may have embellishments and must wash on a delicate cycle and air dry).

Yummy Chocolate Chunk Cookies!

Looking to make a crowd pleaser chocolate chuck cookie recipe…then look no more! My family loves these cookies and they are so easy.

Well, there’s no secret, it’s the Original Nestle® Toll House® Chocolate Chunk Cookies…however, I drop the butter and add a Crisco® butter stick and 2 tablespoons of water. The cookies bake softer and chewier.

Ingredients: 2 1/4 cups of all-purpose flour, 1 tsp. baking soda, 1 tsp. of salt, 1 stick of Crisco® butter, 2 tbsp. of water, 3/4 cup granulated sugar, 3/4 cup packed brown sugar, 1 tsp. vanilla extract, 2 large eggs, package of Nestle® Toll House® Semi-Sweet Chocolate Chunks (Optional 1 cup chopped nuts).

Preheat Oven to 375°. Combine flour, baking soda and salt in a small bowl. Beat Crisco® butter stick, 2 tbsp. of water, granulated sugar, brown sugar and vanilla extract in large mixer bowl. Add eggs, one at a time, beating well. Gradually add flour mixture and chocolate chunks.

To a greased pan, drop round mixture spoonfuls and bake for 9-12 minutes depending on how well-done you prefer your cookies. Makes about 3 dozen.

Summertime = Sunscreen Time

I love summertime and there’s nothing better than a great sunny day at the pool. However, that can also be a very dangerous day. Yes, we all love having a nice glow, but be smart about your summer tan. WEAR SUNSCREEN!!!

1st – You don’t want a sunburn…that’s damaging to your skin and it’s painful.

2nd – You don’t want to look 70 when you are 40! A super deep-oiled tan may look nice now, but later, it will add years to your face and body.

3rd – You don’t want skin cancer. “Skin cancer is the most common form of cancer in the United States and over the past 31 years, more people have had skin cancer than all other cancers combined.”

Be smart and wear at least an SPF 15 and reapply every hour to 2 hours. Plus, wear a hat or create some shade with an umbrella. Better yet, visit a dermatologist for a consultation and understand your risk for skin cancer.

So to prevent premature aging and skin cancer, wear sunscreen! It’s your best summertime friend!

*My favorite sunscreen is Coppertone Sport Mist Spray (great coverage and doesn’t not run into eyes).

The Women Behind The Men

Today is the 4th of July and again, the United States celebrates our independence and freedom from England by acknowledging the “Founding Fathers” who created this great democratic nation. But why don’t we acknowledge and celebrate the women behind these men? For without the love, support and courage of the “Founding Mothers,” the outcome of the American Revolution may not have been the same.

For example, when I think of “Founding Mother’s,” Martha Washington and Abigail Adams come to mind.  Remember, there were no salons, tampons and seamless panties and bras. They cut their own hair and were literally “on the rag”…and had uncomfortable corsets and petticoats under their hot and itchy dresses.

These women endured years of loneliness as their husbands played their historical positions in the Revolution. As the British were only miles away, these courageous women ran their household operations and farms, raised and educated their children and dealt with death and disease.  Also, these intelligent women were strong influences on their husband’s political views. Plus, numerous colonial women were in the battlefields loading ammunition, firing weapons and delivering correspondence past enemy lines. Without these brave women, we may still be under English Rule.

So every July 4th, celebrate the “Founding Fathers & Mother’s” and their sacrifices to create “One Nation, Under God, indivisible, with liberty and justice for all.”
